Thai Curry with Lemongrass

The sweet potatoes in this dish can be substituted for any type of potato but the taste will be altogether different.
Fresh chillies can be added if you prefer this dish
even spicier.

<Other ingredients you will require:
1lb (450g) chicken (diced)
1 large onion – grated
1 clove of garlic, crushed
2 tablespoons vegetable oil
1/4 pint (150ml) chicken stock
8 fl oz (225 ml) tin coconut milk
1 lb (450gm) sweet potato cubed and deep fried
1 teaspoon of sugar
salt & pepper to taste
The Spice Pack is included

Serves 3-4 people

Note:- Ordinary potatoes can be substituted for the sweet potatoes but this will alter the taste

    The sweet potatoes in this are an inspiration. Since we first had it my family demand it weekly. We’ve made it with chicken, prawns and tofu and it’s just as great every time. Never had anything quite like it. Give it a try, you won’t regret it.
