Thai Curry Sauce

Description

This dish is very easy and quick to prepare. It’s all pulled together in a large karachi (or pan) creating lots of tasty sauce. It can be served with either rice or noodles.
Other ingredients you will require:
6 tablespoons natural yoghurt
2 tablespoons tomato puree
4 tablespoons of vegetable oil
1-2 teaspoons of sugar
1/2 – 3/4 pint boiling water
1/2of a block of creamed coconut
1 fresh green chilli (chopped)
2 tablespoons fresh coriander (chopped)
300gm prawns (washed & prepared) or 3 chicken breasts (diced)
The Spice pack is included

Serves 3-4 people

    I cannot get over how EASY PEASY this sauce was to make a brilliant thai curry. I had a load of left-over veg and some chicken and just threw them all in. Took about ten minutes. Really, really delicious and made loads. Perfect student fodder 🙂
